Iguana
Iguana's are naturally Vegetarian. They have long been considered a delicacy in Mexico and throughout central and south America. The Iguana meat compares to a meaty but tender tasting chicken. Because of the small size of the meat the best recipes are for faettes chilies, soups and stews. It goes well with many sauces and especially with fresh fruit like Mango's. |
